We were excited to show off Supplant milk and dark chocolate bars, and to showcase treats like shortbread made with sugars from fiber, to thousands of curious food industry professionals at the Las Vegas Convention Center recently.

The Specialty Foods Association’s annual Winter Fancy Food Show returned to Las Vegas February 6 to 8, after a two-year hiatus due to the COVID-19 pandemic. Representatives of The Supplant Company joined more than 800 companies attending to show off new food products and ingredients, share tastes and samples, and celebrate all things delicious, innovative, and edible. In other words, our happy place!

Peter Crook, our Partnerships Lead, said that the experience was “really positive!” He enjoyed connecting with companies of all sizes, and from all kinds of niches, because they were all interested in various elements of our story — from our celebrity backers like Chris Paul and Ayesha Curry, to acclaimed Chef Thomas Keller using sugars from fiber in his food.

Many attendees were fascinated to hear about how we upcycle unused agricultural side streams to help reduce sugarcane dependence, and were deeply interested in how Supplant sugars from fiber is a functional ingredient that causes a lower glycemic response than sugar, and acts as a prebiotic that’s good for gut health. As Crook says, “The general feeling was that what we are doing is needed, and people are incredibly positive about the mission.”

Of course, at an event like this, the chance to try food innovations is the highlight for everyone. Crook said he enjoyed “seeing the excitement and passion in people’s eyes” as they tried thousands of innovative foods. Some of the standouts included alternative salty snacks like fish skin and duck eggs, plus a tasteless kale supplement, waffle cone snacks, and even lactation cookies.

While there were too many amazing foods and companies to name them all, we were especially impressed with other companies that are, like us, looking for ways to promote sustainable food systems. And like Supplant sugars from fiber, many of the foods showcased fit with prevalent trends of foods made with natural ingredients, with a lower sugar content.

But the absolute highlight? Crook admits that “slipping off to Bouchon [Bistro] to try the profiteroles made with our chocolate” was the icing on the cake.
